SPRING

When the cherry blossoms are blooming, and become fantastic pink in the Kiyamachi Shoji area located in the center of Kinosaki Spa, many delicious seasonal foods from the sea and mountains that are very close are available.
The bamboo shoot is the representative food of Spring.The succulent crispy and chewy taste combined with a sweet flavor fills your mouth, provoking thoughts of a mild spring day with the warm shining sun.
We recommend the "tile fish"/"horse head fish" which look a beautiful sea food pink to our eyes.Tilefish or Horsehead fish are known as a high quality food that is very popular for their soft white meat and light taste. They are a very good match with various other foods of spring such as bamboo sprouts.

SUMMER

Kinosaki spa is very close to Sea of Japan. You can enjoy very fresh tasting sea food. Especially the high quality Abalone very famous in summer. Abalone with it's sea breeze flavor. You can try it prepared in various ways such as fresh slices, steak or baked on a charcoal fire,etc..
The Tajima beef, a local speciality is recommended as a perfect match for the hot summertime. This internationally famous beef also known as Kobe beef, Matsusaka beef, Omi beef, etc.. are all famous brands of beef known for their excellent marbled quality of the meat.

AUTUMN

A famous expression, " Autumn Appetite" in Japan, Autumn in Japan is known as the treasure house period for food.Matsutake mushroom is very popular food, especially since you can only taste them in the Autumn.One of the reasons for it's popularity is it's crunchiness.
By heating Matsutake mushrooms the taste and flavor increases, our recommendation is to steam it in an earthen ware pot, or have the Matsutake cooked in rice.
Also as a great sea food, Snow crab, whose fishing season opens from Sept. just before the very well known Matsuba crab season begins.

WINTER

Matsuba crab is regarded as one of the main representative foods of Kinosaki spa in the winter season(the local brand name of snow crab). Because of the restrictions on the crabing season, Matsuba crab is only caught in a short period from November 7th to March 31st every year.This is a very special food.
Especially Matsuba crab caught by ships from the Tsuiyama port close to Kinosaki spa, are very famous because of the freshness and sweetness of the meat and the good taste of (kanimiso)Crab Butter: This is the white-yellow fat inside the back of the shell of a large crab. It is considered a delicacy. Please try our Matsuba Crab dinner prepared in the Nishimuraya Honkan style, only the freshest Tsuiyama crab is prepared for our guests, so they can enjoy the real taste of Matsuba crab.Please ask to have the crab prepared in various ways,such as raw, boiling or baked on a charcoal fire etc..
